50 Recipes, #16: Israeli couscous with pistachios and apricots

Another recipe from Veganomicon. [livejournal.com profile] columbina loved it, but I thought it was only okay. The apricots were a little too sour for me; I'd have preferred something with a better sweet/tart balance, like dried cranberries. Served with roasted vegetables for a nice vegan meal.

Odd note: the only Israeli couscous the grocery store had was Marrakesh Express' "couscous grande." COUSCOUS GRANDE, people. I am going to take the high road here and assume that the marketing geniuses at Hormel (which owns Marrakesh Express) are doing this because "grande" is common currency in English now, but still sounds vaguely "exotic." And the reason I'm going to take the high road is that if I actually think about reasons why people might want to excise the word "Israeli" or "Jerusalem" from the usual name for this type of couscous, I will get very, very angry.
