50 Recipes, #24: Mushroom polenta pie
Recipe from Moosewood's low-fat cookbook, though of course I futzed with it: a little Gouda and mascarpone in the polenta; portobellos instead of ordinary sliced mushrooms; CSA turnip greens and spinach instead of chard. What can I say? I think of recipes as guidelines, not rules, and this is what I had lying around the house. (Also, I had to use up the Gouda somehow.)
Very, very good; I'd definitely make this again. And now, I need to come up with something to do with 6oz. of mascarpone. OH WELL.
