The recipe is actually called "Mediterranean lima beans," or something like that, but jagpatel's husband hates limas, so I used Great Northern beans instead. You slow-cook the beans in a tomato sauce with lots of garlic, onion, oregano, and thyme, and a little bit of red wine vinegar, and end up with something that tastes vaguely minestrone-esque and only gets better as it sits in the fridge.
