Thanksgiving 2021

Logging this here for my own memory as much as anything else:
  • Cherry tomatoes stuffed with guacamole – do not do this again unless the tomatoes are much bigger, my god, what a pain in the butt no matter how good they were

  • Cheese pennies, of which I have now made two batches in about as many days, 'nuf said

  • Grilled turkey & gravy, bird butterflied, of course; a 12lb. bird on a grill in 50° weather took a bit more than 2 hours

  • Vegetarian main: tater tot casserole, with many sautéed mushrooms instead of sausage

  • Cranberry-tangerine conserve

  • Cornbread dressing

  • Roasted brussels sprouts with vegetarian fish sauce vinaigrette, all hail Bragg's Liquid Aminos

  • GF biscuits

  • Homemade pistachio-honey ice cream

  • Mendiants with candied orange peel and walnuts, and hooray, I have enough chocolate and orange peel to do another batch

  • GF cheesecake brought by my friend J


That was more than enough food for six, but my god, how good it felt to be able to have a proper Thanksgiving meal again. Also, the lightly smoked turkey is going to make one hell of a gumbo tomorrow night, but that's [livejournal.com profile] columbina's responsibility. See, everyone says I'm a picky eater, difficult to feed, but that's a falsehood. Here's what I want (and got!) out of Thanksgiving dinner: brined, roasted turkey crown (who needs dumbass dark meat?), Stove Top stuffing (no veggie bits to ruin it), cranberry jelly out of a jar. Wife cannot and, more importantly, does not complain about cooking this. Now, she makes a chicken with roast potatoes for herself and Son, and carrots and parsnips for herself because it's not a feast without some nasty English recipe. Add a couple bottles of wine, and viola, Thanksgiving dinner.

That is an excellent menu. Also, thanks for the cheese pennies link, I am saving that in my KAB recipe box!

I hear you on how good it felt to be able to have a Thanksgiving again.

You can save a lot of time and effort by just buying already-made cheese balls from sellers like Pete Schweddy. He was a guest on NPR's Delicious Dish show, and the hosts absolutely delighted in sampling the succulence of his trademark Schweddy balls.
