the great thing about DW canon is that multiple visions of the lead character -- in love with Rose; in love with Reinette; sleeping with either of them; mostly asexual -- are all defensible. It was a little weird writing a story that represents something I don't think happened, but it felt true to the characters nevertheless.

I can't agree more. If you pinned me down and demanded my literal interpretation of S1 and S2, I'd have to say that I don't think that the Doctor and Rose were physically involved. I do not like that, so I've written around and within the episodes to alter that fact. Now, I like very much you explanation here of why that is: You want this from Rose, and I believe she would give it to you as willingly as I, but you will not take it.

Another point:

I'm sure she could tell that he cared deeply for Reinette, but there's a difference between recognizing that and magically knowing that your not-quite-boyfriend has kissed someone else.

She probably didn't know about the kiss -- but she is fully aware that he left her stranded to dash through a mirror to rescue Reinette. She's used to being the one he makes dramatic gestures about, and that had to be a jolt (regardless of whether or not you think she knew he would come back). She was aware at that time that Reinette loved the Doctor.
