50 Recipes, #28: Salted caramel ice cream
Jul. 26th, 2009 09:10 pmI had leftover cream from last week's blueberry shortcakes, it's finally decided to warm up around here, and the latest Gourmet included a pile of ice cream recipes: clearly, someone was trying to tell me something. The custard alone was good enough that I wondered whether I'd end up eating all of it with a spoon before I had a chance to freeze it, but somehow I found a shred of willpower, and there is now about a quart of salted caramel ice cream in my freezer.
Those of you who are in the Boston area or have spent time here should know that this tastes quite a bit like Tosci's burnt caramel. Tosci's gelato is a little darker and thicker, but I think you'd find the salted caramel version a worthy substitute.
