Recipe number fifty! It's from Gourmet Today (insert obligatory Condé Nast hate here), and I've been meaning to make it for the past couple of weeks, but had to trek out to Burlington to find the sweet rice flour I needed. (The local Japanese grocery closed when the university holding their lease decided to take over that space.)
This cake is worth hunting down the rice flour for, trust me. It's basically a giant coconut mochi. If you like coconut and want something that isn't overly sweet, I definitely recommend it.
I'm giving about half of it away to a coconut-loving friend tonight. This is probably for the best, or I'd end up eating it all.
