It's delicious, but for some reason, Americans don't eat much of it. (Maybe because it's got a much stronger, gamier flavor than chicken or turkey?) If you've never had it before, you might want to try Peking duck at a Chinese restaurant that does it well -- it's hard to beat the combination of duck, crispy duck skin, hoisin, and scallions.
