50 Recipes: #1, Ricotta Cheese

A few people on my flist are doing the 50 recipes thing again this year, and even though I'm getting a late start, I think I'm going to follow along as well. Today I made ricotta cheese from scratch, which turns out to be ridiculously easy (almost as easy as making paneer), and which will be turned into cheesecake tomorrow for dinner with my parents.

Note: If any of you decide to make ricotta by hand, it tastes absolutely terrible, so please feel free to send me your batches and I will dispose of them in an ecologically sound manner.

I would help dispose of the world's unwanted ricotta, and be green at the same time. For several reasons.

There may yet be more to get rid of, since I stupidly failed to read the recipe before going grocery shopping and bought an entire extra gallon of whole milk.

Whole milk? Shudder... it's been a while since I've had whole milk in the house. I guess mixing my lactaid into the ricotta cheese recipe would cause "irrepeatable" results.
