Dinner

Black bean and veggie quesadillas, topped with the prettiest pico de gallo in the universe.

The orange and brown tomatoes and the jalapeño are from the CSA; the pink tomato, garlic, and parsley are from my garden. (columbina has the defective cilantro gene, so no cilantro for us.) The shallot is from Whole Foods, so I fail slightly at fully local food, but trust me, it tastes delicious anyway.

I think the whole world has gone tomato crazy. Plin said she's roasting some, and I'm just about to make sauce.

There will be panzanella tomorrow night with three colors of cherry tomatoes. Besides, we have to enjoy tomatoes while they are yummy and in season, because pretty soon winter will be here, and we'll have nothing but hard pink tennis ball tomatoes in the stores, and it will SUCK.

That's why I'm making ten pounds of sauce and freezing most of it. Earlier today, for similar reasons, I made several cups of emergency winter pesto.

I made three bags of pesto today and then realized I didn't have anything for dinner, which meant only two bags of emergency pesto, and THEN found last week's pesto in the fridge. Ha!

And now my freezer is totally full so I can't make tomato sauce and the season is this close to over. So that sucks.
